The Market Menu

The Market menu has proved to be a popular innovation, offering two courses for €25 (lunch only), three courses for €40 or four courses for €50, of seasonal ingredients, with several choices at each course.

You may select an item from each course to compose your 2, 3 or 4 course menu.



Sesame-crusted local goat cheese, pickled beets, roasted nuts, beet gel, spiced tomato jam

Deconstructed burratina, roasted pine nuts, balsamic pearls, basil gel, tomato powder

Pumpkin and roasted red pepper soup, wholegrain crouton, natural yogurt

Traditional Maltese fish soup, dehydrated lemon, herb crostini

Seared scallops, twice-baked pork belly, cauliflower mash, mushroom & pancetta crumble

Butternut squash Acquerello risotto, almond and pumpkin seeds, crisp sage, grana shavings

Paccheri with slow-roasted rabbit ragú, pea emulsion, rosemary oil

Chicken & mushroom cannelloni, glazed with tomato and local pepper cheese let cream gratinated

Cuttlefish & prawn ravioli, fish veloutė, pistachio crumble, mint dusting

Fettuccine with truffle purée, Portobello, oyster mushroom, baby spinach

Pan-roasted salmon, Romaine lettuce, wakame seaweed, spiced mayo, toasted sesame oil

Seabass, beurre blanc, roe, squid ink arancina and baby spinach

Pan-seared chicken breast, chicken leg croquette, red cabbage jam, zucchini flower fritter, porcini veloutė

Braised beef cheeks, truffle mash, carrot textures, crispy kale and red wine reduction

Slow-cooked pork belly, charred baby leeks, celeriac remoulade and Port jus

Sous vide lamb leg with cauliflower couscous, cumin-scented ratatouille and chocolate jelly

(All main courses are served with vegetables and potatoes of the day.)
